Butterfly Pea Flower is very commonly grown in Thailand and, traditionally. has been consumed for its many health benefits as a tea or as a colorful ingredient in various foods. When steeped in hot water, the resulting tea has a rich, deep blue colour due to the presence of several powerful anti-oxidant compounds. It contains significant amounts of the catechin EGCG - epigallocatechin gallate, the same as in Green Tea but without the caffeine, as well as a host of anti-inflammatory and immune system supporting components such as flavonoids, tannins and polyphenols.
However, what makes Butterfly Pea Flower quite remarkable is the fact that when lemon juice or other acidic food is added, the colour changes from deep blue to purple. This unique ability has caused Butterfly Pea Flower to become quite popular around the world enabling the creation of brightly coloured and colour changing foods and drinks. Butterfly Pea Flower tea has a pleasant mild taste without any bitterness.
Butterfly Pea Flowers are rich in bioflavanoid compounds known as anthocyanins which cause the deep blue colour and which are known to have strong anti-oxidant and anti-inflammatory actions with many health benefits. Traditionally, Butterfly Pea Flower has been used to support various brain functions and help to uplift mood and help with depression and stress. Similarly, it has been used to help with a number of different eye problems and generally support good vision.
The famous ancient Greek physician Hippocrates regarded Butterfly Pea flower as having many benefits for women's health, especially as its shape resembles that of a female clitoris, hence the scientific name Clitoris ternatea.
